Malolactic Fermentation - Bacteria to Create that Smooth Buttery Flavor
Learn how to make a wine with the silky buttery note that MLF can create. Malolactic fermentation (MLF) is a controlled bacterial fermentation when a lactic acid bacteria is introduced to convert the natural malic acid (a very tart acid) to lactic acid (much milder acid). In this course we'll discuss when MLF is appropriate, what temperature is best, and how oak and alcohol levels affect the process.
