MEDIA ADVISORY: Penn State Berks hospitality management students present veggie research project to community

WYOMISSING, Pa. – Penn State Berks hospitality management students are collaborating with the local community through their veggie research and recipe project. On Monday, April 22, 2024, from 1–3 p.m., students will present their research and a published recipe booklet to community members served by Penn State Health St. Joseph at their downtown Reading campus.

The project focuses on sustainable food and community engagement. The first phase required students to research a vegetable product and its classification, origin, nutritional value and sustainable sourcing use. Phase two entailed creating recipes based on their findings with their vegetable as the main ingredient. The recipe is focused on the health and wellness of the Berks senior community. Phase three will conclude with students’ presentations of their research and a published recipe booklet.

Community partners included Penn State Health St. Joseph's Family and Community Medicine; the Veggie Rx program, a collaboration between Penn State Health St. Joseph and Penn State Berks; the Berks LaunchBox; and Hoober Produce.
